Here’s a low-cost way to setup an overhead camera to video capture handwritten ‘boardwork’. I personally setup my ruler+cellphone on a stack of boxes and then put a can of beans on top of the rule to keep it from toppling over. Your phone can also join a Zoom session and broadcast synchronously.

It is also important to not join the audio, but also to mute the audio of your secondary device! Otherwise you will get feedback.

Joining a zoom meeting from multiple cameras is a truly excellent way to get multiple points of view. It's always good to not join the audio from any of the other cameras. Only your primary. And specific with Zoom, you do not want to be logged in to the same account on the adjacent devices. We've had problems with losing room controls when logged into the same account. Best if you can invite the other devices at personal addresses.

Yes, that's a good clarification. I had my laptop logged in as 'host' of the meeting. My cell phone joined the meeting using the meeting ID.

How do different configurations effect what gets recorded.

Whomever is Speaking and the Shared screen will be recorded. Another option is to make the phone your co-host once joined. Then your Video from the Laptop(as an inset) and the Shared Screen from the Phone should both be recorded. Your personal setting may further affect what's seen.
